About the role
- Miru Niseko is looking for a Sous Chef/Kitchen Team Lead to help lead our breakfast team.
- During winters, working alongside the Chef & Restaurant Manager, you'll run daily breakfast operation & manage seasonal kitchen team.
- During green season, work alongside the rest of the team for breakfast & lunch operations. Develop a high-performing team, and make sure every guest leaves with a great impression.
- This is a permanent, full-time role with a clear path to grow — ideal for an experienced Chef de Parties ready to step up. Start is flexible: the position is available immediately, with a latest start date of 1 November 2026.
Responsibilities
- Work along with chef on breakfast menu design & planning.
- Lead winter kitchen operations — staff rostering, shift assignments, and real-time performance monitoring.
- Train and lead the winter seasonal team, designing and delivering training that keeps service standards high
- Set the standard by example — upholding company policies, presentation, and professionalism in the kitchen.
- Act as the lead problem-solver for operational issues.
- Maintain a safe, clean, hazard-free environment and handle incidents.
- Run team briefings, keep detailed shift logs, and ensure smooth operations.
- Be responsible for stocktaking, inventory checks, and ordering.
- Identify and drive improvements to back-of-house policies and procedures.
Requirements
- Sound cooking skills
- Proven experience in a kitchen role
- Working knowledge of hotel restaurant kitchen operations
- Able to prioritise and organise work independently to meet deadlines
- A proactive, all-hands-on-deck attitude with a genuine passion for cooking
- Able to use suppliers ingredients ordering systems.
- Japanese and English bilingual preferred
- Driver's license

- Experience leading a seasonal team.
